Pineapple-Ginger Lassi, Non-Dairy

Yeah, its’ cold outside.. well for many parts of the world.

Here on the west coast of the United States, it’s been Spring since mid-December!

Chilly cold nights, warm sunny days, no rain, no clouds.

So it’s not incomprehensible that one might whip out a cool drink and wander into the backyard.

Our neighbor’s chickens have the right idea.. spending the afternoon pecking near the orange tree.

We served this refreshing drink at my Cafe, and it was one of the top 3 sellers.

Pineapple Ginger Lassi

  • 4-5 Ice cubes
  • 1/4 inch piece of fresh organic Ginger, peeled and sliced
  • 1 1/4 c. fresh Pineapple, cut in chunks
  • Scant cup Almond or Coconut Yogurt
  • Cinnamon or Nutmeg for garnish

Place ice in blender and pulse until crushed but not liquid.

Add rest of ingredients.  Blend.

Garnish with cinnamon and a pineapple wedge. Swirl once with a straw and serve!

    1. I took some of my home made Almond yogurt to the kitchen and a few people loved it (and took some home). Ronnie agreed to use it in the Greek Meatball menu at my suggestion, but there doesn’t seem to be pull to go nondairy… yet.

    1. I know! J just got back from 4 days in Buffalo. I asked him to fill a box w snow to bring back(assuming by then it would have melted and we can pretend it rained on the lawn). What else is in that vault of yours?? 🙂

    1. Layla, I sent you a reply.. and will send a home-made almond yogurt recipe that is easy and tasty. In a pinch you can use Soy yogurt if you have it there. I don’t use much soy since it’s a bit controversial for people who want to avoid too much ‘estrogen’. xx
