We had a few days of rain about a week and a half ago. It’s back to sunshine and 65-70 degree weather.
In the meantime, seeds and shoots waiting to sprout, did so… and to my surprise we have 3 Swiss Chard plants nestled among the clover! I almost tripped over them as I marched around the backyard yesterday, with our cats in tow as usual.
The family that lived here for 30 years before we purchased the property, were into many things.. including hydroponics, geodesic home building, and creative gardening.
Chard will be a main feature in tonight’s dinner.
Phyto-Rich Garden Juice
Carotenoids are a group of phytonutrients that lend the red, orange and yellow hues to fruits and vegetables…beta-carotene, lycopene, lutein, etc.. Carotenoids are present in all living organisms, but humans are not able to make them and must get them from food.
Carotenoids seem to prevent cancer by acting as antioxidants. Some laboratory research has found that the carotenoids in dark green leafy vegetables can inhibit the growth of certain types of breast cancer cells, skin cancer cells, lung cancer and stomach cancer.
Forget Jamba Juice’s tired veggie and frozen fruit smoothies.. the nutrients were depleted long before they made it to your local store, and if not then, certainly sitting in their coolers.
We stopped a Jamba employee while he was making a green drink for us, after noticing the greens were mostly yellow in color. He tried to tell us they were fresh!
I guess Jamba does not train their employees in nutrition and signs of vitamin depletion. Or maybe like most companies, it’s all ok if it boosts the bottom line. Sad, since they pass themselves off as a health juice provider.
It’s so easy to make your own fresh juice, and a lot of fun.
Your good health is worth investing in a good juicer (motor should be far from grinding mechanism with no metal parts touching the vegetables).
Today’s juice included the following tasty selection of vegetables, and fruit…
Go by this visual to assemble your ingredients.
I used about 1/2″ of the ginger, since it’s so powerful, and half a red apple.
Choose red over green apple, to gain the benefit of its blood sugar lowering effect.
How gorgeous is this presentation?!
