Vegan Eggplant and Spicy Chopped Salad Sandwich

Eggplant - Mushroom Medley

I love this concoction because it goes well on lupin flour pasta, on a GF cracker or as a dip.

  • 1 med. organic white Onion, chopped

  • 1 med. Eggplant, mostly peeled and diced

  • 5 organic Mushrooms, peeled and chopped

  • 1 organic Tomato, chopped

  • 1 c. chopped Parsley

  • 1 Tbs. organic Tomato  Paste mixed with 1/2 c. hot water

  • 1 tsp. Pink Sea Salt, or to taste

  • 1/2 tsp. Black Pepper

  • 1/2 tsp. Cayenne Pepper (opt.)

  • 5 cloves of Garlic, chopped

  • 1 Tbs. e.v. Olive Oil

Place onion in a large saucepan over medium heat, no oil.  Watch the onion, stirring until it begins to turn brown.

Add eggplant and mushrooms and cover, turn to medium low, and stir every 2 minutes, until eggplant is wilted.

Add tomato and parsley. Stir, cover and simmer over low heat for 5 minutes.

Add the diluted tomato paste, seasoning and garlic, turn heat to medium, and cook uncovered for another 10 minutes, or until veggies are cooked through and water is absorbed.

You may drizzle with of olive oil once you remove from heat.  This dish is good warm or cold.

Spicy Chopped Salad

  • 1/2 bunch organic Parsley, chopped

  • 1/2 bunch organic Cilantro, chopped

  • 1 small white Onion, diced

  • 1 organic Tomato, chopped

  • 1/2 organic Jalapeno pepper, minced

  • 1 Tbs. fresh Lime juice

  • 2 tsp. fresh Lemon juice

  • 1/2 tsp. Pink Sea Salt

  • 1 Tbs. virgin Olive Oil

Mix it all up!

Serve as a topping for stews, sandwiches or as a fresh dip with toasted GF bread.

Assemble Sandwich

  • Vegenaise (opt.)

  • 1 Tbs. organic Tomato Paste

  • GF, high-fiber Bread or WASA Rye cracker

Spread a slice or bread or a cracker with tomato paste and the other slice or cracker with Vegenaise.

Spread some of the Eggplant Medley over the tomato paste. Then top with Spicy Salad.

Hello Brussels. Why so Bitter?

The Case of the  Brussels Sprout

This is not the story of a boy from Brussels and how he wound up in Court....

This is the story of a Sprout accused of being bitter and unfriendly.  The first mention of this sprout is traced to the late 16th century. It is thought to be native to Belgium, specifically to a region near Brussels, after which it was named.

This Sprout is a member of the Brassica family and therefore related to Broccoli and Cabbage. Don't be fooled by its size however! Watch what you say because a Sprout grows up with a bunch of 20 to 40 other Sprouts, on the stem of a plant that grows as high as three feet tall!

These miniature-sized vegetables contain the largest content of anticancer phytochemical compounds such as glucosinolates. Like broccoli, the indole-3-carbinol has been found to reduce cancer growth especially for estrogen dependent cancers (e.g. uterine, breast, cervical).

It Takes Proper Cooking to Bring Out the Sprout's Goodness!

Perfectly cooked Brussels sprouts have a crisp, dense texture and a slightly sweet, bright, and "green" taste. Steaming the Sprouts increases their health benefit potency.

Steam them

Bring a scant 1/2 inch salted water to boil in a large frying pan or saute pan. Add Brussels sprouts, cover, and cook until sprouts are tender to the bite and water has evaporated, about 5-7 minutes (depending on how crisp you like them).

In a Steamer Basket:  Bring about an inch of water to a boil in the bottom of a pot into which your steamer basket or insert fits. Put cleaned Brussels sprouts in the steamer basket, set over the boiling water, cover, and steam until tender to the bite, about 5-7 minutes.

You can toss them with Olive or Coconut Oil, salt and pepper; garlic and lemon; or with Pasta Sauce!

Roast them

  • 1 1/2 lbs. organic Brussels sprouts, ends trimmed and yellow leaves discarded

  • 2 Tbs. virgin Olive Oil

  • 1 tsp. Sea Salt

  • 1/2 tsp. freshly ground Black Pepper

  • 1 tsp. Paprika

  • 1/2 tsp. organic Garlic Powder or 2 cloves well mashed

  • 4 Tbs. lemon juice

Rinse Sprouts trim off ends and place in a large bowl. Blend the spices together with the oil and lemon. Pour this over the sprouts and toss until well coated.

Place in oven proof dish or cookie sheet lined with parchment, and roast at 400ºF for 35 minutes or until lightly golden.

Braise them

Braising, or slow cooking in liquid on the stove, is a great way to elicit Brussels sprouts' natural, nutty flavor.

Lentil Mash and Kale Salad

  • 4 Tbs. Extra Virgin Olive Oil

  • 1-1/2 c. organic White Onion, chopped

  • 1/4 c. organic California Basmati Rice

  • 1-1/2 c. hot Green Tea (or boiled Water)

  • 3 c. Sprouted Organic Lentils (or parboiled Regular Lentils)

  • 1 tsp. Pink Sea Salt (or to taste)

Cumin for garnish is optional.

Heat olive oil in a 1 quart pot over medium heat.  Add onions and sauté for 10 minutes stirring occasionally, until golden. Add tea or water and salt. Simmer on low for 5 minutes.

Add lentils and rice, cover and simmer for 20 minutes if using sprouted lentils (35 minutes if using regular lentils). Stir occasionally so bottom does not stick to pot.

You may need to add a little more water if it looks too dry.  The consistency should be like thick oatmeal. You may use the back of a large spoon to mash some of the lentils for a creamier texture.

Taste, and adjust salt. Sprinkle lightly with cumin if desired.

Accompany the lentils with my Kale salad.

Kale, Tomato and Parsley Salad

  • 3 c. organic Kale, chopped

  • 1 organic Tomato, diced

  • 2 organic Green Onions, chopped

  • 1 c. chopped organic Parsley

  • 1/4 c. chopped organic Mint

  • Juice of 2 Lemons

  • 1/2 tsp. Cumin

  • 3 Tbs. extra virgin Olive Oil

  • 1 tsp. Pink Sea Salt

Mix it all together.

The Secrets of Sage

Salvis Officinalis, comes from the Latin salvare, meaning to 'save' or 'cure'.

There is a proverb in an old Italian manuscript that states: 'Why should he die who has sage in his garden?'

We have the English to thank for the idea of smothering sage in onions and adding it to breads and sausage for stuffing! Who knew.

The English also drank sage tea long before black tea became the choice for this afternoon tradition. I found it very tasty.

The Secret?

Several scientific studies show that Sage brightens your mood, rejuvenates your concentration, and sharpens your memory.  Perhaps that's why a sage is thus named?

Place 6 - 7 leaves in 9 oz of water and simmer for 15 minutes.

Storage:

Sage will keep for up to a year kept in an airtight container, and stored in a dark, dry place.

What do Your Teeth Have to do With Cancer?

When I lived overseas as a teenager, I had to have a root canal. I was so terrified of shots in my gums, that I refused the anesthetic.  The Dentist did the best he could with topical Novocaine and pain meds.  Not surprisingly that root canal had to be revisited 20 years later.  And after I developed breast cancer, 15 years after that, and heard about this connection, I realized my root canal was on the same side of my body as the breast that had cancer. 

Also, amalgam fillings : the silver fillings made from a mixture of mercury, silver, tin and copper, build up toxicity over time.  Mercury is a known carcinogen, and copper is the metal that allows cancer cells to establish new blood supplies!

The Relationship Between Root Canals and Cancer

When a person in the United States has a toothache, due to an infection in the tooth, rather than cure the infection with 3% food grade hydrogen peroxide, dentists almost always kill the tooth. They will typically drill out the insides of the tooth and fill the tooth with metal rods.

This is called a "root canal." Root canals are a safe haven for microbes. Because no blood reaches the inside of the tooth, the immune system cannot kill any microbes inside the dead tooth.

Microbes do not originate in the root canals, rather they originate elsewhere in the body (such as were cancer cells form). The microbes thrive and some of them hide from the immune system inside the root canals.

These microbes, and other toxins from inside the tooth, periodically come out of the tooth and cause reinfections. It is impossible to cure more than 200 diseases unless all of the root canal teeth are removed properly because even if you killed the microbes of the disease, microbes hiding in the root canals can come out and reinfect the person.

The American Dental Association has known about this for decades.

Root canals are a major cause of the immune system being suppressed and they are a major cause of cancer:

  • "Dr. Thomas Rau, who runs the Paracelsus Clinic (cancer clinic since 1958) in Switzerland recently checked the records of the last 150 breast cancer patients treated in his clinic. He found that 147 of them (98%) had one or more root canal teeth on the same meridian as the original breast cancer tumor. His clinic has a biological dentist section where all cancer patients, on reporting in, have their mouth cleaned up first -- especially all root canal teeth removed.
  • There are about 24 million root canals done in the U.S. alone every year. They were proven deadly disease agents in 1925 in a study by Dr. Weston Price and 60 prominent researchers. That study has been suppressed ever since by the ADA and the American Association of Endodontists (AAE).
  • Read the book "Root Canal Cover-Up" by George Meinig, DDS, FACD for the full story. Dr. Meinig was an endodontist for 50 years. He helped found the AAE in 1943. His book is a mea culpa (apology) to the thousands of patients whose health he ruined doing root canal fillings.

What is interesting about this quote is that 100% of the breast cancer patients had root canals, or other infections, on the same acupuncture meridian.

Since the microbes do not originate in the root canal, what this implies is that breast cancer cannot form without the assistance of the metals and microbes coming from the root canals.

What You Can Do

The ideal solution is the have the root canals AND all dental amalgam removed from the body, followed instantly by heavy chelation therapy (e.g. chlorella, zeolites, etc.).

But don't go to your local dentist to have this done or things might get worse. In other words, if the root canal is not done by the right kind of dentist, the net result may be that nothing is accomplished or things have been made worse.

There is a specialized type of dentist called a "biological dentist" or a "holistic dentist."

These dentists are sometimes persecuted by the corrupt American Dental Association, so do not expect to find one in the local telephone book. They can be hard to find locally. Internet search engines may be the best way to find a local holistic or biological dentist.

In the San Francisco Bay Area, we have such a dentist in Alamo.  Conduct your own search.  Even if you find one 30 miles away, it's well worth the trip for your future well-being.  And be firm about asking for non-amalgam fillings in your children's teeth.

Every Time I Hear About Someone Losing the Fight. . .

Grammy-winning disco legend Donna Summer, who steamed up the charts in the 1970s and 80s with raunchy hits like "Love to Love You Baby" and "Hot Stuff," died Thursday aged 63, her family said.

Known as the Queen of Disco, the singer whose hits also included "I Feel Love" and "She Works Hard for the Money," died in Florida from lung cancer, the TMZ celebrity news website said.

"While we grieve her passing, we are at peace celebrating her extraordinary life and her continued legacy. Words truly can't express how much we appreciate your prayers and love for our family at this sensitive time."

TMZ reported that she had kept her illness quiet, and didn't appear too sick only a couple of weeks ago, citing sources as saying she was focused on trying to finish a new album she had been working on.

It cited sources as saying Summer believed she developed lung cancer after inhaling toxic particles following the September 11, 2001 Al Qaeda attacks in New York.

I am shaken when I hear about someone who has succumbed to cancer.  My first thought is 'Were they aware of waht it takes to increase the odds of healing?

Statistics do not reflect what they’re touted to because of this very point.  No studies track what a cancer patient is doing in their home, in their mind and in their bodies.

Are they eating cancer-fighting foods? Are supporting their immune system with targeted supplements? Do they participate in a form of exercise that strengthens and moves the energy? Are they positive and determined to recapture good health? Do they surround themselves with cheerleaders and friends who lift them up? Do they live in fear or do they embrace the fact that this is as an opportunity for deep transformation?

Without this vital information, no one can claim that 60% of xyz patients live 5 years after recurrence of some cancer, and that 30% will have no recurrence, or that 46 % of breast cancers will reappear in the other breast... etc..  (Those are made-up stats for argument’s sake).

Patients must be educated about the CRITICAL importance of adding Complimentary Therapies and controlling their thoughts and outlook.

Only a couple of the allopathic doctors I worked with in the past 2 years admitted they only had ONE class in Nutrition during Med School!! I knew way more than they did on that topic.  My radiologist asked me for a list of the supplements I was taking, and what the benefit of each one was.  She was the only doc interested enough to begin to explore that area. How sad is that?

Super Duper Dill 'n' Veggie Omelet

We had a little plumbing crisis last night. J did a couple of loads of laundry, his little girl took a shower and we used bathrooms all within the same hour or so.... Yikes!  Our 35-year-old pipes couldn't handle it. While waiting for the plumber this morning, I had time to make a leisurely breakfast.

One of the classic breakfasts that is served in Lebanon is a Dill Omelet. Mom made an oven baked version that includes some flour, and was rich with dill and onions.

Black Bean Salad

  • 4 c. cooked organic Black Beans, drained

  • 1/2 c. organic sweet Onion, chopped

  • 1/2 c. organic Cilantro, chopped

  • 1/4 c. organic Mint, chopped

  • 1/2 organic Serrano Chili Pepper chopped (opt.)

  • 2 medium organic Tomatoes, chopped

  • 2 organic Green Onions, chopped

  • 4 Tbs. organic Apple Cider Vinegar (Bragg's is best)

  • 2 Tbs. Lemon Juice

  • 2 Tbs. Flax Seed Oil

  • 1 Tbs. Olive Oil

  • 1 tsp. Sea Salt

  • 1/2 tsp. Cumin or more to taste

  • Black Pepper

     

Mix everything together in a large bowl. Taste and adjust seasoning to your taste.

Coconut Cilantro Chutney

One of my sweet 30-something nephews came over for lunch today.  We hadn't really visited for some time since he lives an hour away. We caught each other up on news over chicken tacos, chicken Thai curry, whole wheat couscous, kale salad and spinach flat bread (I like eclectic meals).

I realized that I didn't have a chutney to serve, since most are so full of sugar I rarely buy them.  I came across this recipe... It goes very well with fish too, and takes just minutes to whip up.

Coconut Cilantro Chutney Recipe

GreenCoriander chutney

  • 3/4 c. shredded unsweetened Coconut

  • 3/4 c. fresh organic Cilantro, coarsely chopped

  • 1 small seeded organic Serrano chili,  quartered

  • 1/2 c. light coconut milk (or green tea)

  • Juice of 1/2 organic Lime

  • dash of Sea Salt

Place all but Lime juice in blender, or food processor, and pulse until consistency is almost smooth.

Pour into a bowl and mix in lime juice. Taste and adjust seasoning.

As a variation you may add 1 clove of garlic to veggies, or a 1/2 inch slice of ginger.

Makes about 1 cup of chutney.

Critical Functions of Vitamin D

the importance of certain vitamins and minerals in cancer inhibition and better prognosis.

What is Vitamin D?

Vitamin D is technically not a vitamin. It is the name given to a group of fat-soluble prohormones (substances that are precursors to hormones that usually have little hormonal activity by themselves). This supplement must be taken with K2, to direct the calcium it builds into bone only.

Two major forms of vitamin D that are important to humans are vitamin D2, or ergocalciferol, and vitamin D3 or cholecalciferol. Vitamin D2 is made naturally by plants, and vitamin D3 is made naturally by the body when the skin is exposed to ultraviolet radiation (in particular, UVB radiation) in sunlight. Vitamin D2 and vitamin D3 can also be commercially manufactured.

The active form of vitamin D in the body is 1,25-dihydroxyvitamin D. It is involved in a number of processes that are essential for good health, including the following:

  • It helps improve muscle strength and immune function.

  • It helps reduce inflammation, (critical for Cancer).

  • It promotes the absorption of calcium from the small intestine.

Most people get the vitamin D they need through sunlight exposure. It can also be obtained through the diet, but very few foods naturally contain vitamin D. Those that do include fatty fish, fish liver oil, and eggs. 

Most dietary vitamin D comes from fortified foods, such as milk, juices, yogurt, bread, and breakfast cereals. Vitamin D can also be obtained through dietary supplements.

How Vitamin D Reduces the Risk of Cancer

The mechanisms by which vitamin D reduces the risk of cancer are fairly well understood. They include enhancing calcium absorption (in the case of colorectal cancer) [Lamprecht and Lipkin, 2003], inducing cell differentiation, increasing cancer cell apoptosis or death, reducing metastasis and proliferation, and reducing angiogenesis [van den Bemd and Chang, 2002].

In addition, Vitamin D3 down-regulates parathyroid hormone (PTH) [Chapuy et al., 1987]. IGF-I has been implicated in the pathogenesis of human cancer. Since IGF-I stimulates tumor growth and high quantities are a consequence of the standard American diet [Grant, 2002a; 2004], vitamin D can be considered one partial antidote to the American diet.

How Much Vitamin D is needed?

Each person responds differently to UVB exposure and oral intake of vitamin D depending on such factors as skin pigmentation, body mass index (vitamin D is fat soluble), age, condition of digestive tract, other dietary factors, etc.

Dietary vitamin D is insufficient alone to significantly reduce the risk of most cancers since the ingested amounts, up to 200 to 400 I.U. per day, are too low [Grant and Garland, in press]. Evidently, 600 to 1000 I.U per day are required to reduce the risk of vitamin-D-sensitive cancers, except possibly prostate cancer, for which population-average values of serum 25(OH)D are associated with the minimum risk [Tuohimaa et al., 2004; Grant, in press].

The current understanding is that serum 25(OH)D levels should be in the 50 to 70 ng/ml range for cancer prevention and optimal health. The only way to determine one’s 25(OH)D levels is through a blood test.

NOTE: Taking Melatonin supplements allows a reduced dose of Vit. D since they produce a 20 to 100-fold INCREASE in the sensitivity of Breast Cancer cells to Vit. D. This is why periodic blood test to determine Vit. D (25 Hydroxy) level is important.

Kale and Bean Wraps

Filling

  • 1 Tbs.organic extra virgin Olive Oil

  • 1 organic White onion, sliced thin

  • 5-6 cups mixed organic Greens (Kale, Chard, Spinach, Collards, Watercress…)

  • 1 c. organic Carrots, shredded

  • 1 c. cooked sprouted Lentils (cook in broth or green tea and spices to give it flavor)

  • 1 c. Mung Beans, soaked overnight or till sprouted

  • 1/4 c. Water or Vegetable broth

  • 2 Tbs. organic Ginger, chopped

  • 3 Tbs. organic Tamari Sauce (Gluten Free)

  • 1 Tbs. Sweet Chili Sauce

  • 1 tsp. Black Pepper

  • 1 tsp. Cayenne Pepper

Pour olive oil into a large sauté pan over medium heat. Tilt pan to spread oil on bottom of pan. Add onions and saute for 2 minutes, then add greens and carrots.

Stir for 5 -6 minutes or until greens turn bright.

Add Mung beans, lentils and water. Stir to mix.  When it starts to simmer, turn heat to low, cover and cook for 10-12 minutes, stirring occasionally.

Add ginger, and seasoning. Stir well, cover and simmer for another 10 minutes, stirring occasionally, until kale is tender. Add more water if necessary.

Taste and adjust seasoning.

Serve wrapped in wilted Chard leaf, whole grain Tortilla, or open face on WASA Rye crackers.  Bon Apetit.

Fruity Salad

Grapes have high sugar content, so eat in moderation.  Also make sure you bananas are firm and a little on the green side, since they too are high in sugar when ripe.

Makes 4 servings

  • 1/2 c. seedless organic Red Grapes

  • 1 c. organic Strawberries, halved

  • 1 red Fuji Apple, chopped

  • 1 c. organic Soft Tofu, crumbled

  • 2 Tbs. organic fresh Mint, chopped

  • 3 Tbs. Vegenaise

  • 1 tsp. Lemon Juice

  • dash of Monk Fruit powder

In a bowl combine Vegenaise, lemon juice, and monk fruit; stir well and set aside.

In a large bowl combine fruit, and spoon into serving dishes. Mix Tofu with mint and divide among dishes. Serve with the dressing.
