This deceptively looking light salad is quite filling. You may serve it on butter lettuce leaves for an even more elegant presentation. Serves about 4.
1-1/4 c. grated Coconut
2 tsp. organic Tamari sauce
2 Tbs. organic Lime Juice
2 Tbs. Water
2 tsp. Extra Virgin Olive Oil
1 organic Garlic clove, halved
1 organic White Onion, finely chopped
1 large Ruby Grapefruits, peeled and segmented
1 c. organic Alfalfa Sprouts
Toast coconut in a dry skillet over low heat, stirring constantly, for about 3 minutes or until golden brown. Transfer to a bowl.
Add Tamari sauce, lime juice and water to the coconut and mix well.
Heat olive oil on medium in a sauté pan for 1 minute. Add garlic and onion, and stir until softened. Remove and discard garlic. Add onions to coconut mixture.
Arrange grapefruit segments among 4 plates.
Sprinkle each with alfalfa sprouts and spoon the coconut mixture on top.

Tabbouleh has become a popular offering in restaurants and grocery stores across the U.S. Most of what is passed as Tabbouleh is someone's own version of the Lebanese classic. It either has too much bulgur wheat or includes spices that are not in authentic Tabbouleh. Havng grown up in Lebanon, I wanted to share this easy to make, nutritious and delicious salad with you. This recipe has just the right balance of flavors. It can be a side or a meal in itself.
Serves 6-8
2 bunches organic Italian parsley, chopped fine 1 bunch organic mint, chopped fine 6 organic green onions, chopped 2 c. chopped ripe organic tomatoes 1/4 c. fine whole wheat Bulgur, soaked in 1/2 c. warm water * 1/3 c. lemon juice 1/4 c. virgin olive oil 1 tsp. Sea Salt or to taste
Soak the bulgur wheat for 10 minutes, until it is no longer crunchy. If you're using a coarser bulgur grain, soak a little longer.
Mix vegetables in a large bowl. Squeeze the bulgur wheat by the handful and add to veggies. Do not mix in yet. Pour the lemon juice over the bulgur wheat in the bowl, then add the olive oil and salt, and mix well. That's it...!
If you want to eat this salad as the locals do, then have some fresh organic lettuce or cabbage leaves on hand. Fill with Tabbouleh and enjoy.
Note: The dressing is usually added to the Tabbouleh veggies 20 minutes before serving. It will keep covered in the refrigerator for 1-2 days.
* To make a gluten free version, substitute quinoa or bran flakes for the bulgur.
P.S. Sometimes I add finely chopped radish to the salad... don't tell my relatives! ♥
This is one of our family's favorite crock pot meals. You may either cook this in a crock-pot or a large pot on the stove, depending on availability of equipment and time.
This dish is abundant in lycopene, and onions are a major source of a Quercetin, a super-antioxidant. Similar to garlic, onions and shallots seem to be most helpful in cancers of the digestive tract (e.g. esophagus, stomach, and colon). Bell Peppers offer the antioxidant beta carotene.
Thyme It is an excellent source of iron and manganese and Thymol has been found to protect and significantly increase the percentage of healthy fats found in cell membranes and other cell structures.
1 large organic Red Onion, cut into 8 pieces
1 large organic Yellow or Red Bell Pepper, cut into 8 pieces
2 tsp. fresh organic Thyme leaves (1 tsp. dry)
6- 2" long fresh Sage leaves (1 tsp. dry)
A handful of baby Bok Choy or Spinach leaves
1 tsp. organic Oregano
4 organic, free-range Chicken Thighs
2 organic, free-range Chicken Breasts, cut in half (to make 4 pieces)
1 shallot, diced (1 Tbs.)
2 cups homemade or jarred organic Marinara Sauce
1 tsp. Sea Salt
1 tsp. Black Pepper
Pinch of Cayenne Pepper (opt)
Place half the onions, peppers and herbs in the bottom of the pot.
Add half the chicken, then the rest of the onions, peppers, herbs and the rest of chicken. Sprinkle shallot and seasoning on top.
Pour sauce over chicken, nudging pieces with a spoon to allow the sauce to make its way to the bottom.
Crock Pot: Cover and place on High. Time for 3 1/2 hours.
Stove Top: Add 1/2 c. of water to chicken, and place on medium high until sauce begins to bubble. Turn to medium low, cover and cook for 1 hour. Check at 30 minutes, gently stirring to make sure chicken is covered with sauce.

Lentils have been a staple, like rice, in the Middle East, for many centuries. Eaten together, they offer a low-fat, nutritious source of complete protein, fiber, iron and other essential minerals.
The glycemic index gives us the impact of carbs on our blood sugar levels; the higher a rating, the more it spikes your blood sugar. On a scale where 100 is pure sugar (glucose), white rice has a GI of 64, while lentils are low on the index at 29.
This salad is full of fiber and flavor.
2 c. boiled organic Brown Lentils
3 organic Scallions, chopped
1/2 c. organic Flat Leaf Parsley, chopped
1 Tbs. virgin Olive Oil
1/2 tsp. Sea Salt
1/2 tsp. Allspice
1/4 tsp. Cinnamon
dash of Black pepper
Splash of lemon juice (opt.)
Mix all together. Let sit 15 minutes to blend flavors. Stir and enjoy served in romaine lettuce leaf boats.

I love this concoction because it goes well on lupin flour pasta, on a GF cracker or as a dip.
1 med. organic white Onion, chopped
1 med. Eggplant, mostly peeled and diced
5 organic Mushrooms, peeled and chopped
1 organic Tomato, chopped
1 c. chopped Parsley
1 Tbs. organic Tomato Paste mixed with 1/2 c. hot water
1 tsp. Pink Sea Salt, or to taste
1/2 tsp. Black Pepper
1/2 tsp. Cayenne Pepper (opt.)
5 cloves of Garlic, chopped
1 Tbs. e.v. Olive Oil
Place onion in a large saucepan over medium heat, no oil. Watch the onion, stirring until it begins to turn brown.
Add eggplant and mushrooms and cover, turn to medium low, and stir every 2 minutes, until eggplant is wilted.
Add tomato and parsley. Stir, cover and simmer over low heat for 5 minutes.
Add the diluted tomato paste, seasoning and garlic, turn heat to medium, and cook uncovered for another 10 minutes, or until veggies are cooked through and water is absorbed.
You may drizzle with of olive oil once you remove from heat. This dish is good warm or cold.

1/2 bunch organic Cilantro, chopped
1 small white Onion, diced
1 organic Tomato, chopped
1/2 organic Jalapeno pepper, minced
1 Tbs. fresh Lime juice
2 tsp. fresh Lemon juice

Mix it all up!
Serve as a topping for stews, sandwiches or as a fresh dip with toasted GF bread.
Vegenaise (opt.)
1 Tbs. organic Tomato Paste
GF, high-fiber Bread or WASA Rye cracker
Spread a slice or bread or a cracker with tomato paste and the other slice or cracker with Vegenaise.
Spread some of the Eggplant Medley over the tomato paste. Then top with Spicy Salad.
(You may add a protein if you like).
Cover with other slice, press down, and munch!
The Case of the Brussels Sprout
This is not the story of a boy from Brussels and how he wound up in Court....
This is the story of a Sprout accused of being bitter and unfriendly. The first mention of this sprout is traced to the late 16th century. It is thought to be native to Belgium, specifically to a region near Brussels, after which it was named.
This Sprout is a member of the Brassica family and therefore related to Broccoli and Cabbage. Don't be fooled by its size however! Watch what you say because a Sprout grows up with a bunch of 20 to 40 other Sprouts, on the stem of a plant that grows as high as three feet tall!
These miniature-sized vegetables contain the largest content of anticancer phytochemical compounds such as glucosinolates. Like broccoli, the indole-3-carbinol has been found to reduce cancer growth especially for estrogen dependent cancers (e.g. uterine, breast, cervical).
In order to plead the case for this Sprout I lay before you the following:
Brussels sprouts can help us avoid chronic, excessive inflammation
You'll find nearly 100 studies in PubMed (the health research database at the National Library of Medicine in Washington, D.C.) that are focused on Brussels sprouts, and over half of those studies involve the health benefits of this cruciferous vegetable in relationship to cancer

The fiber content of Brussels sprouts: 4 grams in every cup makes this cruciferous vegetable a natural choice for digestive system support.
The detox support provided by Brussels sprouts is extensive. There is evidence from human studies that enzyme systems in our cells required for detoxification of cancer-causing substances can be activated by compounds found in Brussels sprouts.

Perfectly cooked Brussels sprouts have a crisp, dense texture and a slightly sweet, bright, and "green" taste. Steaming the Sprouts increases their health benefit potency.
Bring a scant 1/2 inch salted water to boil in a large frying pan or saute pan. Add Brussels sprouts, cover, and cook until sprouts are tender to the bite and water has evaporated, about 5-7 minutes (depending on how crisp you like them).
In a Steamer Basket: Bring about an inch of water to a boil in the bottom of a pot into which your steamer basket or insert fits. Put cleaned Brussels sprouts in the steamer basket, set over the boiling water, cover, and steam until tender to the bite, about 5-7 minutes.
You can toss them with Olive or Coconut Oil, salt and pepper; garlic and lemon; or with Pasta Sauce!
1 1/2 lbs. organic Brussels sprouts, ends trimmed and yellow leaves discarded
2 Tbs. virgin Olive Oil
1 tsp. Sea Salt
1/2 tsp. freshly ground Black Pepper
1 tsp. Paprika
1/2 tsp. organic Garlic Powder or 2 cloves well mashed
4 Tbs. lemon juice
Rinse Sprouts trim off ends and place in a large bowl. Blend the spices together with the oil and lemon. Pour this over the sprouts and toss until well coated.
Place in oven proof dish or cookie sheet lined with parchment, and roast at 400ºF for 35 minutes or until lightly golden.
Braising, or slow cooking in liquid on the stove, is a great way to elicit Brussels sprouts' natural, nutty flavor.
Fava beans, also known as Broad-beans and very popular in Middle Eastern cooking, are dense with nutrition. Fava beans have no saturated fat or cholesterol and offer a healthy dose of thiamin, vitamin K, vitamin B-6, potassium, copper, selenium, zinc and magnesium. They are also a source of lean protein.
Fava beans can be served raw or cooked. The bean pods are usually discarded, but if young and tender you may blanch them before adding to a dish. The beans themselves can be served in their skin if young and tender, or shelled before eating.
A serving of cooked or fresh Fava beans can significantly increase your intake of folate, iron, manganese and dietary fiber.
This traditional Lebanese recipe is a meal-in-a-pot. It is cooked with home-preserved beef during winter months. You may omit the beef for a vegetarian version.
But besides being an excellent cool weather meal, it can be served at room temperature on warm days. Add a protein and salad.
2 Tbs. Coconut oil mixed with 1 Tbs. e.v. Olive Oil
1/2 c. organic Onion, chopped
2 cups of shelled, fresh Fava Beans, leave inner skins on if tender
1/2 c. each organic Brown Basmati and Wild Rice
1/4 c. organic Brown or French Lentils
2 c. Hot Water or warm Broth or brewed Green Tea
12 tsp. Sea Salt
1 tsp. Cinnamon
1 tsp. Allspice
Pinch of Saffron (opt.)
Place oils in a 1-1/2 qt. pot over medium-low heat. Wait 3 minutes, then add onions. Turn heat to medium, and cook onions, stirring, until translucent.
Add Fava Beans and rest of ingredients. Turn heat to medium-high and bring to a boil.
Cover, and cook on low heat until rice and beans are tender, and liquid is absorbed, about 30-35 minutes. If needed, add a little more liquid, cover and cook until done.
Enjoy alongside a fresh green salad served with a lemon-vinegar-garlic dressing.

4 Tbs. Extra Virgin Olive Oil
1-1/2 c. organic White Onion, chopped
1/4 c. organic California Basmati Rice
1-1/2 c. hot Green Tea (or boiled Water)
3 c. Sprouted Organic Lentils (or parboiled Regular Lentils)
1 tsp. Pink Sea Salt (or to taste)
Cumin for garnish is optional.
Heat olive oil in a 1 quart pot over medium heat. Add onions and sauté for 10 minutes stirring occasionally, until golden. Add tea or water and salt. Simmer on low for 5 minutes.
Add lentils and rice, cover and simmer for 20 minutes if using sprouted lentils (35 minutes if using regular lentils). Stir occasionally so bottom does not stick to pot.
You may need to add a little more water if it looks too dry. The consistency should be like thick oatmeal. You may use the back of a large spoon to mash some of the lentils for a creamier texture.
Taste, and adjust salt. Sprinkle lightly with cumin if desired.
Accompany the lentils with my Kale salad.
3 c. organic Kale, chopped
1 organic Tomato, diced
2 organic Green Onions, chopped
1 c. chopped organic Parsley
1/4 c. chopped organic Mint
Juice of 2 Lemons
1/2 tsp. Cumin
3 Tbs. extra virgin Olive Oil

There is a proverb in an old Italian manuscript that states: 'Why should he die who has sage in his garden?'
We have the English to thank for the idea of smothering sage in onions and adding it to breads and sausage for stuffing! Who knew.
The English also drank sage tea long before black tea became the choice for this afternoon tradition. I found it very tasty.
Several scientific studies show that Sage brightens your mood, rejuvenates your concentration, and sharpens your memory. Perhaps that's why a sage is thus named?
Sage extract has also been valuable in alleviating or preventing:
Sage is native to the Mediterranean. This aromatic plant is easy to grow in many temperate climates, and will attract bees with its lavender flowers.
Clary Sage is the sweet and milder variety, Greek is stronger. Dried Sage is usually Dalmatian Sage native to Croatia, and is sold rubbed, crushed or powdered.
Sage goes well in gravies, butters, stuffing, meatloaf, scones, polenta, on pizza, and with fatty fish.. like Salmon.
Place 6 - 7 leaves in 9 oz of water and simmer for 15 minutes.
Sage will keep for up to a year kept in an airtight container, and stored in a dark, dry place.

While it cools, make the topping.
1 15oz. can Coconut Cream (not milk)
1-1/2 Tbs. Lime juice or 1 tsp. organic Lime zest (optional)
1 tsp. Pure Vanilla extract (2 tsp. if you don't use Lime)
2 Tbs. Pure Maple Syrup
1/4 c. toasted Cashews or Hazelnuts, crushed
Refrigerate can of Coconut Cream upside-down, for at least 3 hours or overnight.
When ready to use... flip can back upright, and open. Any liquid should be floating on top. Drain the liquid carefully using the lid, so you don't lose any cream.
In a dry metal bowl, beat cream with mixer for about 3-4 minutes or until it thickens and holds soft peaks.
Add the lime juice and extract and beat another minute.
Add maple syrup and beat again, until the consistency is what you desire.
Refrigerate for 30 minutes to an hour. The cream will thicken considerable when chilled.
Spread on cake and garnish with nuts and/or fruit of your choice.
If you have leftover cream:
Use to top fresh fruit, or in cocoa, or oatmeal
Mix in chopped fruit and chocolate chips and freeze for a summer treat!
Bitter Melon
A fair number of Complemenary Medicine practioners recommend eating Bitter Melon 2 - 3 times a week. Studies are demonstrating that it has powerful blood sugar control and anti-tumor properties. It is used in Asian medicine to treat diabetes.
Whenever I found some they were not organic. But the benefit so superseded the ingestion of the pesticides, I bought the ridged, bumpy cucumber-like vegetable anyway.
Bitter Melon is the only apt name for this veg! Method of preparation and recipe will decide whether you will eat it or not.
To prepare bitter melon, slice the fruit open and remove seeds and pith. Do not peel. Beginners to bitter melon may parboil the fruit to lessen bitterness, although aficionados say this changes the texture too much. Typically bitter melon is stuffed, pickled, or curried and served with meat or in soup.
Dice and add to Pasta Sauce with lots of garlic and oregano
Dice and cook with other vegetables, like sweet potatoes or peas in a flavored broth
Cook it with onions and pineapple chunks, season with cinnamon
Add it to a Curry dish
Put some in a Stir Fry with lots of ginger, season with Coconut Aminos
Stuff halves with heavily spiced grass-fed beef, onions and tomatoes
Bitter melon is a fruit that grows in Asia, Africa, and the Caribbean. Its reputation as a cure for Type II diabetes is what spiked the interest of Dr. Rajesh Agarwal, a lead researcher in the Colorado study. He thought bitter melon might treat pancreatic cancer, since Type II diabetes often precedes the disease.
Researchers examined the effect of bitter melon on 4 different lines of pancreatic cancer cells and in mice. Mice were injected with pancreatic tumor cells and were randomly divided into one of two groups. One group received water (control), and the second was given bitter melon juice for six weeks. At the end of the study, the tumors that developed on the mice were dissected, weighed, and analyzed.
The results showed that bitter melon juice inhibited cancer cell proliferation and induced apoptosis (cell death). Tumor growth was inhibited by 60% in the treatment group with no signs of toxicity.

That statement was not accompanied by a warning that unless you provide your body with the mechanism to transport that calcium into your bones, it will form calcium deposits.
Calcium buildup in soft tissues can cause medical problems. Calcium can accumulate in the arterial plaque that develops after an injury to the vessel wall.
Normal deposition of calcium occurs in only two places: bone and teeth.
Abnormal deposits of calcium occurs in multiple tissues including:
the inner lining of the arteries (the intima) where atherosclerotic plaque accrues;
the middle muscle layer of arteries (smooth muscle calcification);
the heart valves, especially the aortic valve causing aortic stenosis
Vitamin K2 appears to be the most important factor in steering calcium into the bone and away from heart valves and the arterial system.
Vitamin K is absolutely essential for regulating calcium balance in the body. A deficiency of vitamin K status causes brittle bones and a vascular system that hardens to a state of poor functionality.
A substantial volume of studies shows that insufficient vitamin K2 accelerates arterial calcification.1 A new study shows that restoring vitamin K2 reverses arterial calcification.2
Based on the plethora of studies published in 2008, vitamins K2 and K3 have also emerged as intriguing agents in both cancer prevention and treatment.
Vitamin K2 has been shown to induce apoptosis (cell destruction) in leukemia cells in vitro.3
In nature, vitamin K is found in two forms: vitamin K1, which occurs in leafy green vegetables; and vitamin K2, which exists in organ meats, egg yolks, dairy products, and particularly in fermented products such as cheese and curd.
While some ingested K1 is converted to K2 in the body, significant benefits occur when vitamin K2 itself is supplemented.4

In 1998, the U.S. Food and Drug Administration (FDA) admitted in court that it had reached "no dispositive scientific findings" about the risks of genetically engineered foods.
There is no scientific consensus about the risks of eating genetically engineered food, according to a statement last year signed by nearly 300 scientists.
The scientists agree that "Concerns about risks are well-founded" and that a "substantial number" of "animal feeding studies and reviews of such studies...found toxic effects and signs of toxicity" in animals fed genetically engineered food, compared with controls.
"Some of the studies give serious cause for concern," the scientists write.

>> Mutating weed resistance is requiring the Monsantos to sell even more powerful herbicides.
>> The Big 6 chemical and seed companies are working diligently to monopolize the food system at the expense of consumers, farmers and smaller seed companies.

Every year the Environmental Working Group (EWG) releases their annual guide to sunscreens,1 and this year's data again shows that you must be very cautious when choosing sunscreen to apply to your skin.
1. Oxybenzone This is one of the most troublesome ingredients found in the majority of sunscreens.Oxybenzone is believed to cause hormone disruptions and cell damage that may provoke cancer.
2. Retinyl Palmitate (Vitamin A palmitate) Sunscreen products may actually increase the speed at which malignant cells develop and spread skin cancer because they contain vitamin A and its derivatives, retinol, and retinyl palmitate.
3. Fragrance Beware of products that contain synthetic fragrance, as this term describes any number of harmful chemicals that do not have to be listed individually on the label.
Even a sunscreen that claims to be "broad spectrum" may not provide adequate UVA protection. As EWG reported:5
"After a 34-year process of reviewing sunscreen safety and efficacy, the U.S. Food and Drug Administration has implemented enforceable rules on sunscreen marketing and UVA protection. The FDA allows American sunscreen makers to claim their products are 'broad spectrum,' even though many offer much poorer UVA protection than sunscreens sold in other countries.
Based on the products in our 2014 database, EWG estimates that about half of all beach and sport sunscreens could not be sold in Europe because they provide inadequate UVA protection."
So, look for a sunscreen that contains the minerals zinc oxide and titanium dioxide.
If you work in the outdoors, are planning a trip outdoors, or if you need to protect sensitive areas of your face (like around your eyes), safe sunscreen is certainly recommended. But if you apply sunscreen every time you're out in the sun, you'll block your body's ability to produce vitamin D.
Studies show melanoma mortality actually decreases after UV exposure. Moderate exposure to sunlight, particularly UVB, is protective against melanoma (the deadliest form of skin cancer) due to the vitamin D your body produces.

Spend some time outdoors in the sun regularly, but do so with some commonsense precautions:
- Expose your skin to sunlight for short periods daily
- If you're in the sun for longer periods, cover up with clothing, a hat or shade
- Shield your face from the sun daily using a safe sunscreen or a hat.
- Consider the use of an "internal sunscreen" like astaxanthin to offer additional protection.

When I lived overseas as a teenager, I had to have a root canal. I was so terrified of shots in my gums, that I refused the anesthetic. The Dentist did the best he could with topical Novocaine and pain meds. Not surprisingly that root canal had to be revisited 20 years later. And after I developed breast cancer, 15 years after that, and heard about this connection, I realized my root canal was on the same side of my body as the breast that had cancer.

When a person in the United States has a toothache, due to an infection in the tooth, rather than cure the infection with 3% food grade hydrogen peroxide, dentists almost always kill the tooth. They will typically drill out the insides of the tooth and fill the tooth with metal rods.
This is called a "root canal." Root canals are a safe haven for microbes. Because no blood reaches the inside of the tooth, the immune system cannot kill any microbes inside the dead tooth.
Microbes do not originate in the root canals, rather they originate elsewhere in the body (such as were cancer cells form). The microbes thrive and some of them hide from the immune system inside the root canals.
These microbes, and other toxins from inside the tooth, periodically come out of the tooth and cause reinfections. It is impossible to cure more than 200 diseases unless all of the root canal teeth are removed properly because even if you killed the microbes of the disease, microbes hiding in the root canals can come out and reinfect the person.

TUCSON, Ariz. (March 25, 2013) - The non-profit Consumer Wellness Center (www.ConsumerWellness.org) has issued a consumer health warning over Adya Clarity, a "detox" product that was seized by the FDA in 2012 and tested at over 1200ppm aluminum.
The product is currently being marketed through a series of highly deceptive webinars that claim almost magical powers for the product. In reality, the product is primarily made of metals dissolved in sulfuric acid, and it was imported into the United States using the description "battery acid" on import documents.
Adya Clarity's two most prominent metals are aluminum and iron. The manufacturer of Adya Clarity intentionally and deliberately refused to list aluminum on the label, instead listing beneficial trace elements such as magnesium.
Here's the chemical breakdown of Adya Clarity, as tested by the FDA after they seized the product:
• Aluminum average 1040 ppm • Iron average 1070 ppm • Sulfuric acid average .927 % • Lead .012 ppm • Arsenic .027 ppm
The marketing of Adya Clarity is based on a parlor trick of pouring an acidic liquid containing dissolved metals into a glass of water, which is more alkaline.
The sudden shift in alkalinity causes particles (metals) to appear in the water. This is described by the deceptive marketers as a "cleaning" of the water.
Promoters of Adya Clarity, which include Matt Bakos and Kacper Postawski, claim that when the product is consumed internally, it pulls metals out of your body. In reality, the product introduces potentially toxic levels of non-organic iron and aluminum into your body.
